Chicken and Chorizo Paella

 
 
Well, this was quite filling, it tasted ok if not a bit salty but other than that, tasted good.  
 
Ingredients used: Peas, prawns, chicken, paprika, salt, pepper, rice, fish stock
Summary of recipe: Fry prawns and chicken, put chicken in oven for 30 minutes, cook up rice with paprika in fish stock, once cooked, add all ingredients togethor with more stock adding peas last with that stock.

Carrot and Coriander Soup

Carrot and Coriander soup, easy to make, and very tasty! nice winter meal, I've made this one before, once carrots are cooked, just a matter of blending it all together. Served with a brown bread roll, a nice change for a meal.

Ingredients used: carrots, coriander, onions, salt and pepper and vegetable stock.
Summary of recipe: Fry up onions and chunks of potato and coriander, boil and strain carrots, and then boil altogether with some vegetable stock then blend it all in blender.

Butternut Squash Curry


I love butternut squash, now just had to google some recipes to find something that sounded good to cook. Had quite a lot of potatoes this week so bit of rice was needed with this one! Fairly quick to make as no meat in it, and loads of flavours. Think I'll be having this one again. Well, Steve has asked me to cook on Saturday for him and his dad so I can't be that bad of a cook, no-one has ever asked me to cook before, usually, ask me not to cook lol.

Ingredients: butternut squash, chick peas, tinned tomatoes, corriander, vegetable stock, onion,
Summary of recipe: Cook rice, cut and fry up butternut squash pieces with onion, add vegetable stock and chickpeas and tinned tomatoes and simmer.

Homemade Fish Pie

Well, I thought I may as well cook 2 dinners whilst cooking the fishcakes, had some cod fillets and potatoes so all I had to buy was prawns. I didn't really want go to and buy more ingredients for a white sauce, extra costs (and calories!) so had a quick google and found one of Jamie Oliver recipe's for fish pie without white sauce. Made the day before so all I had to do was chuck it in the oven after few hours of painting the new place. This pie was really tasty, very filling, and now I think I will need to run this one off tomorrow on the treadmill!

Ingredients used: Potatoes, onion, spring onion, cod fillets, prawns, milk, parmasen cheese and few breadcrumbs for top
Summary of recipe: Boil and then mash potatoes with some spring onions, with some milk. Cook fish in oven, fry up prawns, put prawns and cod in dish with some onions, add mash potatoe to top, sprinkle with parmasen and few breadcrumbs and bake.
 

Homemade Fishcakes

After asking around for a bit of inspiration, my brothers girlfriend suggested making fishcakes, they have them all the time she said...OK convinced. So I made an attempt and they weren't too bad, tasted OK for a first attempt! Chopped up some potatoes, bit of oil in oven and had them with wedges.

Ingredients used: Potatoes, cod fillets, spring onion, salt + pepper to season, milk, egg, few slices of bread
Basic summary of recipe: Boil potatoes and then mash with milk, cook cod in oven, mix together spring onion and flake cod and mix all together. Split and shape into patties, dip in egg and then breadcrumbs then fry!


What to cook....

Right then, lets see if  I can cook some good homemade food, might take some practice but here goes!!
